CORN   AND   SPAGHETTI  ON  TOAST

This combination of East and West makes a tasty and filling snack.

Preparation time: 30 mins. Cooking time: 15 mins. Makes about 15 pieces

 

You will need:

 

1 medium loaf sliced bread

2 teacups cooked corn

2 teacups cooked spaghetti                                             

1 chopped onion                                                            

2 tablespoons milk

2 tablespoons fresh cream

2 teacups white sauce

4 tablespoons grated cooking cheese

Tomato slices

A little butter

2 tablespoons ghee

Salt and pepper to taste

 

To be ground into a paste

 

4 green chillies

4 cloves garlic

¾ teacup chopped coriander

12 mm. (1/2”) piece ginger

 

Method:

 

 

  1. Apply butter to the bread slices and toast them.
  2. Heat the ghee and fry the onion for ½ a minute
  3. Add the paste and fry again for 2 to 3 minutes.
  4. Add the corn, milk, cream and salt.
  5. Mix the spaghetti and white sauce. Add salt and pepper and half the cheese.
  6. On each toast, spread a layer of the corn mixture first and thena layer of the spaghetti mixture. Cover with the tomato slices and sprinkle the balance cheese on top.
  7. Bake in a hot oven at 450˚ for ten minutes.

 

SERVE HOT!!!

 

Martini

                              GAZPACHO

A dieters’ version of the classic cold soup.

Preparation time: a few minutes. No cooking. Serves 4

 

You will need:

 

4 chopped tomatoes

4 teacups tomato juice

4 teaspoons lemon juice

4 teaspoons vinegar

8 tablespoons finely chopped onions

1 clove crushed garlic

2 chopped cucumbers

4 finely chopped green onions

Salt to taste

 

Method:

 

  1. Blend the tomato, tomato juice, lemon juice, vinegar, onion and garlic in a liquidizer.
  2. Add half the cucumber and blend again.
  3. Taste and add salt.
  4. Chill in the refrigerator.

 

Serve chilled in individual cups, topped with green onions and the remaining cucumber.

 

CHOCOLATE TRUFFLE BALLS


 

Ingredients:

 

Melted dark chocolate

Mixture of groundnuts + biscuit crumbs

40gms grated white chocolate

25gms chopped almonds

1tsp butter

1.5tsp icing sugar

Cherries(for garnishing)

 

Method:

 

1.      In a mixing bowl put the melted dark chocolate.  Then add the butter and icing sugar & the mixture of groundnuts + the biscuit crumbs.

 

2.     Make balls of the mixture, stuff a few almonds in each ball and then keep aside. In another plate spread out the grated white chocolate and roll the balls in it.

 

3.     Put the balls on a serving plate and put a cherry  top of each for garnish. Then refrigerate the balls for about 6-8 minutes. Ready to eat!!!!

STRAWBERRY MOUSSE

 

 

Serves 4-6

 

You will need:

 

1.      1 party pack of strawberry ice-cream

2.     1 packet of jelly powder (raspberry flavoured)

3.     Strawberries (for garnishing)

4.     Chopped pieces of chocolate (for garnishing)

5.     cold water

 

Method:

 

1.      Take a bowl and pour in the jelly powder from the packet. Add 3-4 glasses of cold water. Keep the bowl in the refrigerator for about 30 minutes.

 

2.     When the jelly is half done, take it out from the refrigerator. Take the pack         of ice cream and put it bit by bit while blending with jelly. Take the beater and beat until thick and smooth.

 

3.     Take a serving dish and pour in the mixture. Put it in the refrigerator for another 30-40 minutes.

 

4.     To garnish, decorate the top of the mousse with chopped strawberries and chocolates.

BAKED CHOCOLATE CHIPS & CANDIED FRUIT CHEESE CAKE

SERVE 6

1 1/2 CUP COTTAGE CHEESE (PANEER) - CRUMBLED
1/2 CUP POWDERED SUGAR
1 1/2 TSP VANILLA ESSENCE
4 EGGS - SEPARATED
1/2 CUP CREAM
2 TBSP RED WINE OR MILK
4 TBSP CHOPPED MIXED CANDIED FRUIT (TUTTY FRUITY)
40 GM/1 SLAB DARK CHOCOLATE - CHOPPED INTO SMALL PIECES (CHIPS)

1. MIX TOGETHER CRUMBLED PANEER AND POWDERED SUGAR

2. SPRINKLE 1/2 TBSP FLOUR ON THE CANDIED FRUITS AND MIX WELL TO COAT THEM
WITH FLOUR. KEEP ASIDE.

3. ADD 1 TBSP FLOUR, ESSENCE AND EGG YOLKS. BEAT WELL

4. ADD CREAM. MIX WELL.

5. ADD WINE, CANDIED FRUIT ALONG WITH THE FLOUR, AND CHOCOLATE. MIX WELL.

6. IN A DRY CLEAN PAN, BEAT EGG WHITES TO SOFT PEAKS.

7. FOLD OR MIX EGG WHITES GENTLY WITH THE ABOVE MIXTURE WITH A WOODEN SPOON.

8. POUR INTO A 7" ROUND TIN, GREASED AND LINED WITH GREASE PROOF PAPER OR A
LOOSE BOTTOMED TIN GREASED NICELY.

9. BAKE AT 150 DEGREE C FOR 1 HOUR 10 MIN OR TILL SET

10. REMOVE FROM OVEN AND COOL. CHILL AND THEN INMOULD.

11. SERVE WITH SWEETENED WHIPPED CREAM AND CHOCOLATE SAUSE

NOTE : CAN BE SERVED AT ROOM TEMPERATURE WITH CHILLED SWEETENED CREAM OR CAN
BE SERVED CHILLED.

CHEESE BALLS

Ingredients Required:-

1. Plain Flour. (maida)
2. Cooking Cheese.
3. Milk.
4. A spoon of Curd.
5. Salt + Pepper.
6. Green Chilly.

How To Make It:-

1. Take a big bowl , put the plain flour(maida) , put cooking cheese.
2. Cut green chillies into fine pieces and keep them in the same bowl.
3. Add 1/2 cup of milk.
4. Add a spoon of curd.
5. Add salt+pepper.
6. Mix all the ingredients together & let the mixture stay for half hour.
7. Meanwhile heat oil.
8. Now, from the batter make small balls and put them in oil to fry till they
turn golden brown in color.
9. Serve hot with Ketchup.
